The East published an article a 1977 article in Black News about the importance of fiber in the diet that influenced this weeks series. The change from stone mills to roller mills at the beginning of the 20th century reduced the amount of fiber in the US food system by 90%. Fiber plays an important role in keeping waste from building up in our colon thereby leading to numerous diseases. A lack of fiber in the colon also results in overeating and increase cholesterol levels. A diet low in fiber is related to diseases such as obesity, varicose veins, blood clots, colon cancer, and coronary heart disease. These diseases have been rare in the west and central African societies of our African ancestors.
