Here is another story straight from the archives of the 1970s to 1980s Brooklyn based food rebel group, the East. The change from stone mills to roller mills at the beginning of the 20th century reduced the amount of fiber in the US food system by 90%. Fiber plays an important role in keeping waste from building up in our colon thereby leading to diseases. A lack of fiber in the colon also results in overeating and increase cholesterol levels. A diet low in fiber is related to diseases such as obesity, varicose veins, blood clots, colon cancer, and coronary heart disease. These diseases have been rare in the west and central African societies of our African ancestors. Options for improving your health are increase your consumption of unbleached flour rich in whole grains and seeds. Second, decrease your consumption of ultra processed foods made with white flour and white sugar, artificial flavors and colors, and chemical additives. Another helpful strategy is eating food high in fiber such as raw produce, and raw nuts and seeds..[1]
