King Carrot
Today I am starting a series based articles published in Black News, the paper of the East. The East had been an Afrocentric movement in Bedford Stuyvesant, Brooklyn during the 1970s and 1980s. They are part of ongoing series on been food rebels. When it came to food, the East understood that activist must develop sovereign nutritious food systems that support the people they seek to help. We look at food as a lens into communities, ethnic groups, movements, businesses, and critiques of the US food system during specific periods. Todays post is based on a May 1 1973 article in Black News.
King Carrot
Carrots are underappreciated vegetables. They strengthen our eyesight and prevent infections in the throat and urinary tract. They are high in vitamin B2, C, iron, and calcium among other things. They cure diarrhea, especially in infants when eaten as a purée. They can be used as a sweetener in food preparations. They taste delicious when served raw or cooked. Carrot juice can be drank alone or mixed with other juices.
Carrot Salad Recipe
Ingredients
2 cups grated carrots
¼ cup served raisins
½ cup vanilla yogurt as dressing
(Optional: add ¼ cup, pecans, ¼ cup grated coconut, ¼ cup pineapple cubes)
Season with ground cinnamon and ginger to taste
Instructions
Mix all the ingredients in a salad bowl with a salad fork and spoon. Serve slightly chilled
