Here is another contribution to our series on black food writers. It is based on an article journalists Ralph Johnson published in an August 1981 edition of Black News, the paper of the Brooklyn-based Afrocentric organization, the East.  The paper regularly published head and heart healthy informative articles. In the early 1980s, researchers published studies documenting the mental and emotional benefits of eliminating white sugar, coffee, caffeinated beverages, alcohol, artificial colors and flavors, preservatives, and chemical additives from your diet. Fasting aids in removing these substances from your body, especially sugar. Doing so reduces one’s chances of regularly experiencing depression, mood swings, fatigue, attention deficit, anxiety, headaches, migraines, and hyperactivity. Studies show that removing sugar, junk food, dairy, gluten, and corn from the diet gradually creates a state of balance and erratic behavior disappears. When the body and brain are fed nutrient rich food and properly hydrated, they function the best.
