Meat vs Sides and Sweet work

What would Arjun Appadurai say about the gastro-politics of barbecuing? One uses the theory of gastro-politics to interpret privileges and food options given or withheld. For example, there is a barbecue scene in Zora Neale Hurston novel Their Eyes Where Watching God. It makes me ask, why do men who don’t usually cook seemingly demand monopoly control of barbecuing meat vs making side dishes or deserts? What are the privileges and advantages of meat vs sides and sweet work?
