The culinary traditions of the old South come together in Iowa. Both Southerners and natives of Iowa cherish open air barbecues which are labor-intensive events which require hours of slow cooking meat over barbecue pits. While very similar in style to Southern barbecue, Iowa’s barbecue tends to put an especially heavy emphasis on sauce. One of the most popular is spicy watermelon barbecue sauce which has staple in the Midwest. In Iowa candidates must know that people show a preference for campaigning in intimate spaces where a candidate entertains questions at a private home in which the host or hostess provides biscuits and coffee as refreshments.
