As mentioned in our last post, each spring Dr. Alvenia M. Fulton’s family sowed sorghum for making molasses on their Pulaski, Tennessee family farm. In her Chicago Defender column “Eating for Your Health and Strength,” she called a jug or barrel of blackstrap molasses a rich and vital source of iron easily assimilated. Two teaspoons of molasses provides 13.3% of the daily-recommended value for iron, 14.0% of the daily-recommended value for copper, 18.0% of the daily-recommended value for manganese, and 9.7% of the daily recommended value for potassium.
