Dr. Alvenia Fulton (1893 to 1999) said that habit and tradition most often determines our diet. She ran Fultonia Health and Fasting Institute on Chicago’s South Side which included a restaurant. Fulton shared strategies for improving nutrition of soul food: use safflower oil if we must fry food; increase the amount of dark leafy greens serve with each meal such as kale, collards, turnips and dandelion greens which are all rich in vitamins (also you can eat all greens raw in a salad when they are young and tender); prepare baked goods like cornbread with unbleached whole-grain flowers such as millet, sorghum, almond, teff, oat, brown rice, arrowroot, and coconut flour; reintroduce black strap molasses to the kitchen table, it's a rich source of iron, copper, manganese, potassium, has him, and vitamins B-1, B-2, B-6, and vitamin E.
