A slower digestive system common in the elderly leads to iron deficiency and anemia, and irritated bowel system caused by excessive bulk from foods high in fiber. They also may suffer calcium deficiency because their body no longer absorbs it easily. Try readily serving them ice cream, rice pudding, and cheese. When they're not on a prescribed specialized diet, they should have meals that include the four food groups: proteins, vegetables, fruits, and whole grains and cereals. Fulton says, “like everyone they should be eating healthy sources of protein and more proteins.”
