Today we continue the series on good nutrition and the work of Dr. Alvenia M. Fulton.

Dr. Fulton on vitamins:

Vitamin A

Vitamin A helps the body resist disease. It is found in cod liver oil, green leafy vegetables, and carrots. It is also found in dairy products such as milk, cream, and egg yolks.

Vitamin BI

Vitamin BI thymine protects nerve tissues and produces energy from sugars and starches. It's found in whole grains, and most all vegetables. Caution, vitamin B-I is a water-soluble vitamin so one should drink the water it is cooked in such as pot liquor—the delicious murky greenish\brown consommé left in a cooking pot used to make collards, kale, or other green leafy vegetable popular in the US South. Fulton writes, the way we prepare food is as important as the food itself, if we desire the maximum amount of nutrients in it. (Chicago Defender, May 6, 1971)
