One of the iconic food spots in Baltimore is Lexington Market. The largest running market in the world, the founders of Lexington Market started the place in 1782 with land that Revolutionary war hero John Eager Howard donated—thus the name Lexington Market. Its founders envisioned a space for farmers to sell produce, diary, meat, and poultry from in places like Towson and other parts of Baltimore County. When I did field work their in 2010, the cuts of meat that represent eating low on the hog such as pigs feet, ears, snots etc. caught my eye.
