During the Civil War company cooks incorporated foraged fruits like huckleberries and apples to make pies. Acquiring cooking utensils while in the field often prove as challenging as finding notable ingredients. Some used turtle shells, gourds, shirttails, and other surfaces to hold and mix ingredients.
