Igbo and Mande Diets

Dating back to precolonial Africa, Igbo and Mande women served greens with chicken battered and deep fried in palm oil. We know that West and Central African diets contained far more greens than Europeans had been in the habit of consuming. In summary, eating meals that include piping out greens is an example of a culinary tradition that survived the African slave trade, slavery, and colonialism throughout the Americas.
